Crawfish Etouffee

Over on my food blog, a semi-successful cajun adventure: crawfish etouffee.

Oh man, I am a total sucker for crawfish etouffee! I might have to track down some crawfish this week and find some dinner guests.

Part of the reason I still eat fish and seafood on occasion is because living in places like Texas and Louisiana would have been totally impossible if I didn't. In Louisiana, in particular, I pretty much survived on crawfish etouffee, blackened catfish, and shrimp po'boys. It was heavenly.

not etouffee in particular but the finale took place in new orleans so there was a lot of that style of cooking.
